A recipe for you

I know I haven't been around much lately but there really hasn't been a lot going on since Christmas. I'm doing some knitting and my nearest and dearest friend Donnely and I are work on some top secret things that I will reveal soon, but in the mean time I do have a recipe for you.

 We are not much for eating cereal at my house so I am always on the look out for breakfast recipes that are healthy and delicious. So when I came across this recipe I knew I had to give it a try. And it taste so good I knew I wanted to share it with those of you who haven't deserted me yet my readers.

Banana Pancakes
11/4 cups flour
1 T. packed brown sugar
1/2t.baking powder
1/2t. baking soda
1/4t. salt
1/1/4cups buttermilk*
2 egg whites
1t. vegtableoil
2 ripe banana-chopped
2 T chopped walnuts-optional

In a large bowl, mix flour, brown sugar, baking soda, and salt. In a small bowl mix buttermilk, egg whites, and oil. Stir into flour mixture. Add the banana and nuts(if using). Mix well.
Coat a large non-stick skillet-I use the griddle-with cooking spray and place over medium heat for 3 minutes or until hot. For each pancake, ladle about 1/4 cup of batter into skillet.Cook until bubbles appear on top and the edges are barely dry. Turn pancakes over and cook about 1 minute or until center springs back when touched. Repeat with remaining batter, coating the skillet with cooking spray as needed.

*If you don't have buttermilk add 1T vinegar to your milk and let it sit for about a minute before adding to your batter.

My son like these with maple syrup but they taste just as yummy plain. They also make a great after school snack when spread with a little bit of peanut butter on them. try these pancakes and you just might find your family has a new breakfast favorite.

Hot Cocoa Mocha Mix

Here is another great gift idea.
3 cup hot cocoa ( I used the one with mini marshmallows)
1/2 cup instant coffee
3/4 teaspoon ground cinnamon
1/2 cup mini marshmallows-optional

Mix hot cocoa, instant coffee and cinnamon together.
If not giving as a gift store in an airtight container and use when desired.
To give mix and marshmallows as a gift, package mix and marshmallows in a nice container or little bag
with a cute little label.

Then make a nice little decorative tag with the instructions
Add 3 tablespoons mix to 2/3 cup of boiling water
